Warayaki is a spectacular way of preparing food: Take a bunch of rice straw (wara) and burn it (yaki).
The chef puts a bunch of rice straw on the fireplace, lights it up, and puts the food into the flames. It’s a very short, intense exposure to heat and smoke and light.
The food will then have a smokey aroma, while still being juicy (or even raw) inside.
If you like smoked foods then this is definitely a recommendation to try.

You can see that the fish is raw sashimi inside, but looks slightly charred on the outside. This is very different from giving it a burn with a torch, which is much “cleaner” and doesn’t give it the smokey aroma.
